Crunchy Persimmon Fat Free Granola
A crunchy fat free granola, wonderful on some plant based yogurt or as a snack.
persimmon, about 1/2 to 3/4 of a cup blended, 150 grams
ripe and soft
Preheat the oven to 170C / 340F.
Chop the peeled persimmon and blend it into a creamy consistency.
Add it to the oats together with the maple syrup, cinnamon and vanilla powder.
Spread on a baking sheet and bake until crunchy and golden, about 25 minutes. Stir every 5 minutes or so to make chunks.
Let it cool completely before storing in an airtight jar or zip-lock bag.
