Twix Bars [ raw vegan ]

Something I have been obsessed with when a kid were Twix, Nuts and Bounty bars … chocolate bars like these were something I only discovered when we moved to the Netherlands from eastern Europe. Never saw sweets like this before! We had a few chocolate bars in Hungary but these … Now I am making my own healthy version of my fav Twix Bars, processed sugar and refined stuff free.

These Twix Bars are made of all natural ingredients, no preservatives etc. And they are delicious. You can also try my raw  Triple Chocolate Nutella Squares or Coconut Bounty Bars!

Ingredients for 12 Twix bars,

for the bottom layer,

  • 1/2 cup cashew butter, it also works with almond butter but cashew has a milder, a slightly creamier taste
  • 4 Tbsp. oatmeal or buckwheat
  • 2 Tbsp, of the date caramel ( recipe below )
  • 2 Tbsp. almond- or coconut flour
  • 1/2 tsp. vanilla powder or extract
  • tiny pinch of pink salt

Grind the oats or buckwheat into a corse flour for some texture which I prefer. Add the remaining ingredients to make a dough. This dough is not very sweet which balances with the very sweet caramel layer.

Push it in a with parchment paper layered form, I used a square one, and place it in the freezer to harden.

Caramel,

  • 1 cup packed, pitted medjool dates
  • 1 to 2 Tbsp. lucuma powder, caramel like taste, optional but delicious
  • 1 Tbsp. almond butter
  • tiny pinch of pink salt

Add all the ingredients to a small blender, may need a tbsp. or so of water to make it easier to get it creamy but not too thin. If that happens, just add more dates.

Spread the date caramel on the bottom layer and place it back in the freezer.

When cold enough cut them in 10 to 12 bars.

And now the chocolate layer,

melt 75 grams / 3 oz. of dark vegan chocolate au bain-marie ( above boiling water )

Dip the cold bars in the chocolate using two forks and let them drip on some parchment paper. Place them in the fridge to harden quicker. I added white stripes made of melted cacao butter and stevia, optional.

Stays good in the fridge for up to 4 days, can also be frozen as a back up plan in case of a snack attack for a month or so.

These bars are rich in vitamin E, healthy fats and antioxidants. You can also add some crunchiness in the caramel layer like chopped nuts or rice crispies.
