Today I have a quick and delicious nourishing recipe for you, my Super Green Broccoli Dip! I love these kinds of dips and sauces, easy to make and just perfect to help you stay energized until dinner. This one is also loaded with lots of goodies like nutrients, some healthy fats, plantbased protein, vitamins, minerals and anti-oxidants. An easy snack or a yummy dressing.
Ingredients for 2 portions,
- 2 cups of broccoli florets, may be blanched for 30 sec. if you wish
- 1/2 avocado
- 1/2 cup water or coconut milk
- 1 clove of garlic
- 2 tl. baobab powder
- 1 tl. matcha powder
- 1 tl. nutritional yeast ( vitamine B-complex & iron, not raw, optional )
- handful of basil
- 1 Tbsp. lemon juice
- pinch of himalaya see salt to taste
- black pepper
Baobab powder tastes a bit like grapefruit and vanilla and is made of the pulp of the baobab fruit. Baobab powder has a very high amount of vitamine C which is the anti-oxidant for the body. It is also rich in vitamins A, B1, B2, B3, B6, calcium, potassium, magnesium, iron, manganese, phosphor, zinc, molybdenum and fiber. Also great in juices, smoothies and desserts.
Matcha poeder is made of the Matcha leaves which are dried and ground into a powder. It is a green tea but without the leaves and tea bag. Matcha powder has a huge concentration of anti-oxidants ( ORAC value ) which are needed for a healthy strong body. Also rich in amino acids which are the buildingstones for protein an d miscle tissue, skin, hair, nails and organs! Matcha has a slighly bitter taste and a wonderful color.
Broccoli is considered as one of the healthiest vegetables. Broccoli is rich in vitamins A, B, C, E and K, also calcium, magnesium, zinc, iron en copper. A major plus point for this great veggie is the presence of sulforaphane, a chemical which combats ulcers, hartdisease and cel damage. Broccoli is also rich in fibre so great for the digestion.
Blend in a blender or chop all the ingredients with a foodprocessor to desired consistancy. I like mine creamy! I served it up with some raw grain free crackers, bell pepper and activated dried walnuts. Also great with glutenfree toast, as a dip with for celery, in a wrap or as a thick dressing.
