Zucchini Spaghetti Pesto, raw

Often I am asked the question whether a raw alkaline diet isn’t too time consuming or difficult to prepare!? That’s why today it is a quickie, zucchini pasta with pesto! Great taste and ready in 10 minutes, including prep time. I cut the zucchini with this wonderful machine, my spiralizer, making real “life” spaghetti strings. You can of course always grate it, but it is so much nicer for the eye and the taste to have it like spaghetti.

The ingredients you need for 2 portions are,

  • 1 zucchini
  • 1 cup basil
  • 1 cup spinach
  • 2 Tbsp.cashews or pine nuts, soaked for 2 hours
  • 1/2  cup smashed avocado
  • 1 Tbsp. lemonjuice
  • 1 tsp. appel cider vinegar
  • 1 Tbsp. nutritional yeast, not raw, rich in the vit.B complex
  • 1 clove garlic or garlic powder
  • 1/2 tsp.. himalaya salt to taste
  •  2 tbsp. water

Cut the zucchini with the spiralizer or grate it. You can leave it for 10 minutes with a little salt to make it softer, then rinse it with water. Put all the ingredients for the pesto in a foodprocessor or a small blender untill creamy and to your liking. Dress the spaghetti with a few tbsp. pesto end mix it up. For a extra cheesy flavour you can sprinkle some nut parmesane on top, made from 3 tbsp. grind pine nuts or almonds mixed with 1 tbsp. nutritional yeast.

 

To have it as a maincourse I added some ingredients to make it a complete meal.

A few broccoli florets, cut really fine. Broccoli is rich in potassium, magnesium, calcium, vit.K, zinc, selenium, beta-carotene and it is anti-inflammatory. A big handfull of sunflowerseed sprouts, mild and nutty tasting, rich in zinc, vit.E and B., chlorophyl and plantbased protein. Also 2 Tbsp. of hemp seeds for their essential aminoacids and protein. The pesto is loaded with nutrients and healthy fats to give your body all it needs.

Simple, quick and so good! A great example of an easy Raw Alkaline dish. It is great to serve it to guests, also for not raw eaters always a winner. Also delish on cooked pasta or as a dip.
