A lovely salad to go please … a lunch that always makes me happy!
Take a big glass jar or container. These salads can be prepared upfront the night before so you only have to take it out of the fridge when leaving.
Always put the dressing on the bottom of the jar so your salad won’t go soft and soggy or in a separate little cup with a lid. Your dressing can be something with mustard, maple syrup, lemon juice, salt and pepper, mashed avocado or a nut or tahini based dressing.
Now you can add some “heavier” ingredients, I mean the weight, like beans, radishes, carrots, bell pepper, quinoa, millet or chickpeas.
Then the lighter stuff like tomato, sprouts, nuts and seeds, whatever you prefer!
To top it off some lovely fresh greens, romaine, spinach or arugula leaves and your Salad to Go is ready to go!
