This raw healthy nutella spread aka Rawtella tastes like hazelnuts, it is creamy and smooth, like fluid chocolate! Something a few people in our household are crazy about and now they can enjoy this lovely creamy taste without the added baggage of sugar, milk, bad fats and E numbers. This Rawtella is quick and easy to make, loaded with vitamins, nutrients and healthy fats.
Ingredients for a jar of Rawtella are,
- 1 cup of hazelnut butter, made with raw or roasted hazelnuts ( deeper flavor )
- 1/4 to 1/2 cup of liquid sweetener like rice- or maple syrup, coconut nectar or date paste
- 1 tsp. vanilla powder or extract
- 1/3 cup cacao powder
- pinch of pink salt
- hazelnut stevia for added sweetness if desired
Blend all the ingredients, except the cacao powder, on medium speed nice and smooth. If you can’t get hazelnut butter you can make your own by processing whole raw or lightly roasted ( on a low temperature like 110C / 230F ) hazelnuts until it becomes creamy and soft. This can take a while, be sure to give your food processor a break every few minutes and keep scraping down the sides of the bowl.

When soft and creamy add the cacao powder and just blend until well incorporated. You could add a scoop of mesquite powder to give it a caramel-ish taste. And that is it. You can keep the Rawtella in a glass jar outside the fridge to keep it nice, smooth and spreadable. It is great with and on just about everything, I am sure you can come up with great combo’s! I also love to add it to smoothies. Warning …. don’t take it to the couch with a spoon 😀
