Yummy easy coconut bounties with raw chocolate coating. I love everything with coconuts so these make a perfect treat. Coconut with its all over goodness is the base of these bars, dip them in raw chocolate, well, you should just try it!
Ingredients for the filling,
- 1/3 cup soft extra virgin coconut oil or coconut butter
- 2 cups shredded dessicated coconut
- 2 Tbsp. brown rice syrup to taste
- a few drops of stevia, to taste
- tiny pinch of pink salt
In a foodprocessor work the coconut until it becomes a bit softer, add the oil and sweeteners. It should stick together when you press it between your fingers
The chocolate is made of
- 1/2 cup extra virgin coconut oil, melted
- 1/4 cup raw cacao powder
- tiny inch of salt
- 1 Tbsp. brown rice syrup and/or a few drops stevia, to taste
The chocolate doesn’t have to be very sweet, the filling is sweet enough.
Or the easy way,
melt a raw chocolate bar au bain marie.
Pour a layer of chocolate in a with foil covered dish, put it in the freezer for 10 minutes until you prepare the coconut layer. When the chocolate is hard, the coconut can be spread on it and back in the refrigerator. It can be cut with a warm knife and it tastes best when 10 minutes out of the cold.
You could also press the coconut layer in a dish, let it stiffen up and cut it in squares. These can be dipped in the melted chocolate.
