Raw Chocolate Nut Cupcakes

These Raw Chocolate Nut Cupcakes are filled with almond butter butter and topped with puffed quinoa ( optional, not raw ) or another crunch you prefer like chopped almonds or cacao nibs.

The second of the 3 Superfoods we are giving some extra attention is Lucuma powder. This superfood is loaded with antioxidants like beta carotene, fiber, vitamins like B3 and the minerals zinc, calcium and iron. Lucuma has a mild caramel-ish flavor and is also low in fructose.

Ingredients, for the chocolate,
1/4 cup melted coconut oil
2 Tbsp. raw cacao powder
1 Tbsp. maple syrup
tiny pinch of salt

or a piece of your favorite very pure chocolate, melted
for the filling,
2 Tbsp. almond or any other nut butter of your choice
2 tsp. lucuma
1 El. maple syrup
1/2 tsp maca ( optional )

Mix the ingredients for the chocolate and use half to fill little cups. I like to make them tiny, just one or two bites. Cool to make it solid. Add filling in the center, leave space for the chocolate cover on the sides.

raw chocolate nut cupcakes Cover with the remaining chocolate, sprinkle with quinoa, nuts or bee pollen, what ever you prefer. Back in the fridge until set. A little snack like this gives you energy and a boost thanks to healthy fats, magnesium, iron, zinc and  vitamin E.
