A lovely creamy pudding, great color orange and it tastes like pumpkin pie! Raw to get you full benefits of all nutrients and easy to make. A nice recipe for when you get inspired by all the gorgeous pumpkins all around!
Ingredients for 2 portions,
- 1 cup pumpkin puree, if fresh it can be shredded and soaked for overnight to make it softer and easier to digest
- 1/4 cup coconut milk
- 1/4 cup cashews, ground
- 1/2 tsp. cinnamon or pumpkin spice
- dash of nutmeg
- 2 Tbsp. maple syrup, coconut nectar or date paste, to taste
- tiny pinch of pink salt
All ingredients in a high speed blender to get a creamy consistency. Serve the pudding with some dried coconut flakes and freshley ground cinnamon.
