With all the delicious pumpkins around it is hard not to use them in many recipes! I love to make snacks for on the go and these Pumpkin Oat Granola Squares are just perfect for that. Pumpkin Oat Granola Squares ( gf )

Ingredients
- 1 and 1/2 cups oats
- 1 and 1/2 cup puffed quinoa or rice
- 2 Tbsp. tapioca flour
- 1 tsp pumpkin spice
- 1/2 cup aquafaba
- 1/4 cup chopped pecans
- 1/4 cup plant based milk
- 1/2 cup pumpkin puree
- 3 Tbsp. maple syrup
- pinch of salt
- 12 drops vanilla stevia optional for a sweeter result
Instructions
- Whisk the aquafaba until frothy and light. This can take about 5 to 10 minutes.
- Add in pumpkin puree, stevia if using, plant based milk and maple syrup. Whisk it through lightly but thoroughly.
- Mix in a different bowl the dry ingredients and scoop it through the wet ones.
- Scoop it in a lined baking pan and bake on 325F/160C until golden, about 25 minutes. Let it cool in the pan for about 10 minutes and then cool further on a rack.
