With all the delicious pumpkins around it is hard not to use them in many recipes! I love to make snacks for on the go and these Pumpkin Oat Granola Squares are just perfect for that. I also enjoy them with a cup of hot tea. Love the warming seasonal spices and warming aroma in the house when baking these guys. You find the complete recipe below this post.

Pumpkin Oat Granola Squares This recipe all started with the most delicious pumpkin ever, my favorite, the green kabocha pumpkin. It might look like the orange kind from the outside but from the inside totally not. I love that it is dryer, not so watery and it has a deep, sweet chest-nutty taste. I always use these from baking to salads to stews. I bake the pumpkin in the oven until until golden and caramelized on the edges, this takes about 45 minutes on 400F/200C, depending on the size of your pieces.

Pumpkin Oat Granola Bars You can use canned pumpkin, not the pumpkin pie filling, just pureed pumpkin. We don’t have that option here and I just love baked pumpkin. To make the bars hold together I am using aquafaba, or chickpea water. It can be whipped up like egg whites, amazing! How does one come up with this?! You need to drain a can of chickpeas or of you cook them yourself let the chickpeas cool off in the cooking liquid. This should just cover the chickpeas.

Pumpkin Oat Granola Bars I mostly wanted to use wholefoods, the squares are made from oats and puffed quinoa with a little maple syrup for the taste and some chopped pecans for the crunch. The puffed quinoa makes it lighter than if I had only used oats or a flour instead.

Pumpkin Oat Granola Bars The pumpkin oat granola squares should be done in about 25 minutes on 325F/160C. I just love this color! These squares are healthy, low in fat, whole food based and even low in calories.

Pumpkin Oat Granola Bars The squares are not too sweet, chewy and have a nice crunch due to the pecans. Can’t go wrong with pecans, pumpkin, maple syrup and pumpkin spice right!?

Ingredients

  • 1 and 1/2 cups oats
  • 1 and 1/2 cup puffed quinoa or rice
  • 2 Tbsp. tapioca flour
  • 1 tsp pumpkin spice
  • 1/2 cup aquafaba
  • 1/4 cup chopped pecans
  • 1/4 cup plant based milk
  • 1/2 cup pumpkin puree
  • 3 Tbsp. maple syrup
  • pinch of salt
  • 12 drops vanilla stevia optional for a sweeter result

Instructions

  • Whisk the aquafaba until frothy and light. This can take about 5 to 10 minutes. 
  • Add in pumpkin puree, stevia if using, plant based milk and maple syrup. Whisk it through lightly but thoroughly. 
  • Mix in a different bowl the dry ingredients and scoop it through the wet ones. 
  • Scoop it in a lined baking pan and bake on 325F/160C until golden, about 25 minutes. Let it cool in the pan for about 10 minutes and then cool further on a rack. 

Notes

I keep it in the fridge in a airtight container. Delicious as a breakfast bar or snack on the go.
