Coconut milk, creamy, smooth and easy to make!
Today I am going to tell you how to make your own coconut milk! This time I am using a brown coconut.Coconut milk is loaded with healthy fats, tastes great in all kinds of dishes, savory or sweet.
You can open a coconut in 5 minutes with some practice and determenation ;-). The three dark spots, the “eyes and mouth” of the coconut is where you should make three holes. I just use a screwdriver and a hammer starting with the “mouth”.
THis shouldn’t go too easy because then there is a big chance that your coconut is no longer fresh. When you remove the screwdriver, it should make a plop sound like when you are uncorking a wine bottle. When a coconut is too old it smells moldy and the water is no longer clean and sweet.
Put the holes of the coconut on a glas and when you are lucky you will have a nice glas full with lovely coconut water to put in your smoothie! Start going round and tapping on the coconut with a hammer and it should fall in two pieces. Keep on tapping and you will be able to remove the brown shell and you can rince off the white coconut meat and break it into smaller pieces. Don’t worry about the brown skin, this will disappear once it goes through a sieve.
Put the coconut pieces in a strong hogh speed blender and add just enough water to cover it. Blend till smooth, about a minute. ou can add vanille powder or something to make it sweeter like a date or agave syrup. I left mine pure so I can also use it in savory dishes like a raw soup. Pour the puree through a fine sieve helping it with a spoon or through a nutmilk bag. Do not throw the pulp away, this is great to use in muffinns or bread, it also can be dehydrated to make coconut flower or bread-crumbs, gluten free and great fiber!
