One of my favorite desserts when I was a little girl! Now the healthy version of this chestnut puree & a chestnut green smoothie with superfoods. A real Hungarian recipe. Chestnuts are one of the things you better eat cooked or baked. Nevertheless full of nutrients! The remaining ingredients are all raw.
Chestnuts have been consumed for thousands of years in China and Europe. They are rich in fiber, have a low GI value en are contain healthy fats. They are loaded with vit. B, especially B6, and also folate, B1, B2 and B3. The antioxidants vit. C, E and A are also well represented.
Chestnuts are a good replacement for nuts in some desserts, especially when watching calories and fats. A cup of cashews contain 786 calories per cup and 63,5 grams fat and chestnuts only 350 calories and only 3,5 gram fat. Chestnuts are just like coconuts alkalizing and a great against stress related symptoms.
For the original version you do need a potato press, I guess that is what it is called! You can do without but it does make it lighter and fluffier.
Ingredients for 2 portions,
- 1 cup chestnuts, baked or cooked, shelled
- 4 Tbsp. light coconut milk
- 2 to 3 Tbsp. maple syrup or date paste, to taste
- dash of salt
- 2 Tbsp. raw cocoa powder
- 2 tsp. mesquite powder
- 1 tsp. vanilla powder
- few Tbsp. coconut creme for topping or plant based whipped cream
Chestnuts in a small blender or foodprocessor with the rest of the ingredients. The puree should not be too thin, it has to be pushed through the press and left to stiffen up in the fridge. Decorate with coconut creme. Easy and so good! Like real whipped cream. Coconut milk should be placed in the fridge for a day so the fat separates from the fluid. Scoop the fat off and whip it up with or without adding some sweeteners. I think the puree is sweet enough here.
Date puree is a great sweetener, natural and easy to make, for raw and baked goods. Also great in a raw brownie! A half cup of dates with a few Tbsp. water and blend in a small blender. Can be kept in the fridge for a few days.
Green Chestnut Smoothie [ 499cal. ]
to finish off the chestnuts a creamy chestnut smoothie, also high raw and loaded with Superfoods for a kick!
For 1 big smoothie you will be needing,
- 1/2 cup chestnuts, roasted, shelled
- 1/2 cup light coconut milk
- 1/2 kop coconut water, water or ice cubes
- 1 Tbsp. raw cocoa powder
- 1 scoop bee pollen and extra for garnish
- 1/2 tsp. mesquite powder
- 1 scoop maca, optional
- dash of salt
- handful of spinach
Ingredients in the blender for a creamy smoothie. With less coconut milk and coconut water it will be more pudding like.
