A wonderful Fruity Breakfast Purslane Salad with honey and cinnamon, sweet fruit in combination with greens, perfect, full of nutrients. A nice variation of a smoothie…..

Back from summer vacation, I hope You also had a great summer, I sure did! Rested and inspired to get more wonderful Raw Alkaline information and recipes your way! Love to travel but to get home to enjoy the comforts of my own home and the foods I can buy and make makes me very thankful. On the go sometimes there is just not a lot of choice in fresh produce, so it is back to basics. This can be a really inspiring period to reinvent combinations and to revisit ingredients I forgot about.

The ingredients are,

  • purslane, spinach or green leaves of your choice
  • cucumber slices
  • half of an apple
  • 2 prunes or 1 pear, sliced
  • lime or lemon juice
  • a little raw honey to taste
  • sprinkle of cinnamon

Arrange the green leaves on a plate, top with slices cucumber, apple, pear or prunes, some lime juice on top, drizzle with honey and sprinkle with cinnamon. This makes a wonderful combination for breakfast or as a snack!

For a quick meal blend the ingredients into a smoothie. My favorite fruit / greens smoothie recipes are my Kale Pineapple Smoothie, Raspberry Turnip Greens Smoothie and this Very Berry Choco Smoothie.

We had a buffet style meal three times a day, plus snacks and a BIG array of salads, fruits, fresh herbs like dill, parsley, purslane and mint to choose from to add a little zing to your meals.

It is such a pleasure to be able to enjoy fresh herbs! It inspired me to rearrange my garden! Mint is great in tea and in salads , smoothies and juices. I already used dill but now it will appear more often in my dishes. Purslane I just love and now even more in combination with fruit, honey and cinnamon.

I of course brought my magic bullet and hand-juicer so I could enjoy this lovely basic smoothie or juice in the early morning sun. Cucumbers, apple, parsley, ginger and lemon.

Some great new ingredients to use, real Raw honey to sweeten a fresh mint tea or as part of a salad dressing. Roasted chickpeas as a snack, something I will be trying to make!

In warm and sunny countries there is a big choice of beautiful sweet fruit, from melons to fresh figs, peaches and pineapples! Almonds, goji berries, chia seeds and dried coconut flakes travel well in a suitcase and make a great pudding!

And of course a buffet is not complete without a dessert, here a huge effort from the pastry chef every day. Looks amazing and a great source of inspiration to veganize šŸ˜‰
