Crunchy Persimmon Fat Free Granola [ 184cal. ]

Granola with yogurt is truly one of my favorite foods! I wanted to create a version without the added fats and sugars, yet still crunchy and sweet. This crunchy persimmon fat free granola is sweetened with fruit, a perfect natural  sweetener. Here, I used ripe persimmon but I have also made it with apple sauce and bananas, not at the same time. All of them were sweet and crunchy and make adding fat or oil not necessary to achieve the crunch.

Oats Are Incredibly Nutritious and Delicious!
The nutrient composition of oats is just perfect. Oats  are good source of carbs and dietary fiber and also rich in protein. They have lots of vitamins, minerals and antioxidants.  Oats are the perfect breakfast ingredient, plenty of fiber and even a little fat to make everything absorb perfectly.

I just discovered persimmons a year ago and have been loving them during these colder months. A persimmon has to be ripe to be enjoyed, most of them sold are way too hard to eat so I leave them near some bananas to speed up the process. I personally don’t like to eat on their own them when they get too soft and if they do, I use hem in smoothies or like here in this granola.

This recipe is super easy, all you have to do is just blend up your fruits an add some flavorings Fold in the oats and bake it until golden.

All the ingredients you will be needing for the crunchy persimmon fat free granola are,

  • a big, ripe persimmon or other fruit of your choice
  • oats
  • vanilla
  • cinnamon
  • maple syrup, optional
  • toppings of your choice

This crunchy persimmon fat free granola, can also be a great snack for on the go. For breakfast I love to eat it with yogurt, here I used soy but my homemade coconut yogurt is also just delicious with these crunchy chunks! Chopped walnuts and dried mulberries are my two favorite toppings. Mulberries are the best when frozen, then they become crunchy like nuts instead of chewy. I also added a few cherries and dried apple, a new addition ….

Blended dates, pear puree or even blended pineapple with some dried coconut would also be great I think. Trying the pineapple one next! What would be your favorite combination?

Crunchy Persimmon Fat Free Granola

A crunchy fat free granola, wonderful on some plant based yogurt or as a snack.

Ingredients

  • 2 cups rolled oats
  • 2 tbsp maple syrup
  • 1 large persimmon, about 1/2 to 3/4 of a cup blended, 150 grams ripe and soft
  • 1 tsp vanilla powder
  • 2 tsp cinnamon

Instructions

  • Preheat the oven to 170C / 340F. 
    Chop the peeled persimmon and blend it into a creamy consistency. 
  • Add it to the oats together with the maple syrup, cinnamon and vanilla powder. 
  • Spread on a baking sheet and bake until crunchy and golden, about 25 minutes. Stir every 5 minutes or so to make chunks. 

Notes

Let it cool completely before storing in an airtight jar or zip-lock bag.
