One of the best things about eating lots of raw foods is that you can easily swap desserts for breakfast like I often do with these chia blueberry cups. Raw desserts are so easy to make and everybody seems to just LOVE it! Such a delicious way to get more raw into a day …
This is actually one of the first raw desserts I have made years ago and still a favorite.
Blueberry Chia Cups, 10 small cups or balls,
1 cup almonds or walnuts, or 1 cup almond flour
1 cup pitted soft dates
1/2 tsp. vanilla extract
may be a tbsp. water if needed
blueberry jam,
1 cup blueberries, a few extra for decorating
1/4 cup soft pitted dates or 2 Tbsp maple syrup
1 to 2 Tbsp. goji berries, soaked, optional
2 to 3 Tbsp. ( coconut ) water as needed
1 Tbsp. chia seeds
Add the ingredients for the dough to a foodprocessor and pulse until it can be pressed into a ball between your fingers.
For the filling add the water and the dates or sweetener into a small blender, I love the NutriBullet for these smaller portions, and pulse.
Scrape down the sides and add the chia seeds and the berries. Pulse a few times to break up the the fruit for the desired consistency.
Taste for sweetness and let it chill for 30 minutes. Also great as a spread!

I used little cups, filled it with the dough pressing it to the sides and leaving a whole in the middle. Filled it up with the jam and placed it in the fridge until ready to enjoy!
You can also roll the dough into balls filled with a teaspoon of the blueberry jam.
