Broccoli Zucchini Bites

A new favorite snack! Warm, cold or reheated in the air fryer. They are pretty easy to make and can be stored in the fridge for a couple of days. Serve with a creamy vegan cheese dip!

Ingredients

  • 2 tbsp chia seeds
  • 1/2 cup water
  • 1 large zucchini or 2 smaller ones
  • 3 cups broccoli 1 bunch of broccoli or 3 generous cups
  • 2 tbsp pyllium husk not the powder
  • 30 grams unflavored protein powder
  • 1/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp pink salt to taste
  • 1/4 cup hulled hemp seeds

Instructions

  • Make the chia gel by combining the seeds with the water.
  • Steam the broccoli fork tender.
  • Grate the zucchini and press the excess water out.
  • Process the broccoli I to small chunks.
  • Put it in a large bowl, add the zucchini.
  • Add the remaining ingredients and stir well.
  • You can form larger or smaller patties, I did bite sized pieces.

  • Bake in a preheated oven on 350F or pan-fry in some avocado or coconut oil until golden. Serve with a creamy dip like a vegan cheese sauce!
