Bok Choy wraps [ sunflower seed spread 195cal. ]

These bok choy wraps are filled with a sunflower seed spread, tomato, a few slices avocado, a few olives and arugula, delicious! 

Ingredients for the spread are, 

  • 1/4 cup soaked sunflower seeds, soaked for 2 hours, rinsed
  • 1/4 cup water
  • 3 celery sticks
  • 1 tsp. maple syrup
  • 1 Tbsp. apple cider vinegar
  • 1 Tbsp. lemon juice
  • pink salt and black pepper to taste

Blend until creamy. With more water this spread can be a great dressing for a salad.

Sunflower seeds are a great plant based form of protein, rich in anti-oxidants, vitamine E, vitamine B-complex, calcium, iron, magnesium and selenium.
