These beans portobello burgers are quick and easy to make and I always double the recipe to make sure that I have leftovers the next day. Rich in nutrients and fiber.
Ingredients for 4 beans portobello burgers are,
1 can canellini beans
1 medium oven baked sweet potato
1 chopped onion
1 portobello, chopped small
1 clove garlic
italian herbs, fresh or dry
2 Tbsp. quinoa flakes
1 Tbsp. ground flax plus 3 tbsp. water, mix and let it gel for 5 minutes
1 Tbsp. coconut oil
Fry the onion, garlic and portobello in the coconut oil until soft. Add beans and baked potato, mash. Add in te herbs, quinoa, pink salt and pepper to taste. Form the burgers and bake the burgers in the oven for a lover fat version or in a skillet with a little coconut oil. Bake until brown and golden.
I mostly make them in the oven, without oil, but they taste good either way. I bake them on 400F on a lined baking sheet until golden. I find that everything I bake on these bpa free baking sheets turn out so much better, caramelized and crispy, much better than on parchment paper which I used to use. Turn halfway.
