Today’s post is about a lovely Avocado Orange Dressing which also can be used in a wrap or as a dip for crunchy raw vegetables. It is creamy, fruity and has a little heat thanks to the cayenne pepper and ginger.
All wonderful ingredients which provide us with good fats, anti-bacterial, ant-inflammatory and a lot of vitamin C to help the iron to get better absorbed from the green leaves in the salad. It turned out to be a nice creamy dressing thanks to the avocado, full of vitamins and minerals.
Ingredients, makes enough for two,
- 1 avocado
- juice of 1 orange
- 2 Tbsp. sesame seeds
- 2 Tbsp. pumpkin seeds, chopped or grind
- 1 tsp. maple syrup, honey, date paste or a few drops of stevia, to taste
- fresh grated ginger
- piece of cayenne pepper, without seeds for less heat
- 1 Tbsp. lime juice
- himalaya salt and pepper to taste
All the ingredients in the foodprocessor, you may have to scrap down the side a few times untill you get a creamy dressing. Great on a salad, wrap or dip.
You’ll get great fats from the avocado, the seeds are loaded with minerals and vitamin E and zinc, so important as a antioxidant, sesame seeds for calcium.
This is the salad I ate, crunchy vegetables and lots of green leaves, carrot, bell pepper and some hemp hulled hemp seeds for their complete protein power! You can also try my Turmeric Dipping Sauce for some anti-inflammatory action
