Today’s post is about a lovely dressing which also can be used in a wrap or as a dip for crunchy raw vegetables. It is creamy, fruity and has a little heat thanks to the cayenne pepper and ginger. All wonderful ingredients whhich provide us with good fats, anti-bacterial, ant-inflammatory and a lot of vitamin C to help the iron to get better absorbed from the green leaves in the salad. It turned out to be a nice creamy dressing thanks to the avocado, full of vitamins and minerals.
- 1 avocado
- juice of 1 orange
- 2 Tbsp. sesame seeds
- 2 Tbsp. pumpkin seeds, chopped or grind
- 1 tsp. maple syrup, honey, date paste or a few drops of stevia, to taste
- fresh grated ginger
- piece of cayenne pepper, without seeds for less heat
- 1 Tbsp. lime juice
- himalaya salt and pepper to taste
All the ingredients in the foodprocessor, you may have to scrap down the side a few times untill you get a creamy dressing. Great on a salad, wrap or dip.
You’ll get great fats from the avocado, the seeds are loaded with minerals and vitamin E and zinc, so important as a antioxidant, sesame seeds for calcium.
This is the salad I ate, crunchy vegetables and lots of green leaves, carrot, bell pepper and some hemp hulled hemp seeds for their complete protein power!
