Time for dessert! Try my Icey Green ChristmasTrees….
This is so gooood, christmas and winter in one dessert! Easy to make, pretty, pure, natural, sugarfree and full of nutrients. Is this realy a dessert?
I used silicon tree molds but you can ofcourse use any shape you want. This a great dessert open to a lot of variation. Blend, freeze, dip, decorate and done.
Ingredients for 4 trees/portions,
- 1 avocado
- 150 ml / 1/2 cup plus 2 Tbsp. coconut cream
- 2 Tbsp. brown rice syrup or maple syrup with a few drops of stevia if needed, if you like it sweeter add a bit more
- tiny pinch of salt
- handful of fresh mint leaves
- 1/4 cup raspberries
- 1 tsp. chia seeds
- dessicated coconut
- 2 Tbsp. cacao nibs
- 2 Tbsp. cacao powder
- 1/4 cup melted coconut oil
- 2 Tbsp. cacao powder
- a few dops of stevia
- tiny pinch of himalaya sea salt
I have made 3 different fillings, you can ofcourse pick one flavour for.
- avocado, lime, coconut cream
- avocado, coconut cream, mint, cacao nibs
- avocado, coconut cream, cacao, raspberrie filling
Blend the avocado, coconut cream, lime juice, vanilla powder, brown rice syrup and a tiny pinch of himalaya sea salt. This is the basic avocado coconut ice cream. The inside is gorgeous green, creamy and spectaculair when the chocolate cover is cracked open.
You also can choose for a avocado ice cream with mint and cacao nibs, a classic combo. Just add the fresh mint leaves or mint essence in the blender and fold in some cacao nibs.
Option three is a chocolate ice cream with raspberry jam for filling. Instead of lime add 2 Tbsp. raw cacao powder. When the ice cream is half frozen scoop some of the ice out and replace it with some raspberry jam. Place it back in the freezer.
• 1/4 cup raspberries
• 1 tsp. brown rice or maple syrup or liquid sweetener of your choice
• 1 tsp. chia seeds
Blend the first two ingredients for the jam in a small blender, add the chia seeds and let it sit for 30 minutes.
Place the ice cream in the freezer. Melt the coconut oil, mix with cacao powder, stevia and tiny bit of salt. Remove the ice cream from the molds and dip them in the choco sauce. Because the fact that the ice trees are frozen, the choco dip cools and hardens immediately and you can double dip for a thicker coating.
I decorated one with small pieces of frozen raspberries, one snowy with desiccated coconut and one with chopped pieces of matcha macaroons.
Take them out and let it soften it for about 10 minutes before enjoying it. This makes the inside softer and easier to scoop it up!
